What's For Dinner?

 
 

Student often ask me if I cook for my family like I cook at class.  Well, yes!    It's funny, because after 2-3 days of back to back classes, my husband Adrian will say "Are you sure you want to cook?  Wouldn't you rather go out to dinner and take a break?".  But, no -- I love cooking for my family! I find being in the kitchen so relaxing and peaceful.  I am in the there every day and I wouldn't have it any other way.

This Tuesday night dinner was inspired by my upcoming November Workshop: Thanksgiving.  I love having a couple of go-to recipes for my leftover Thanksgiving turkey.  I may have outdone myself with this one -- it was to die for. My kids LOVED it!

 
 

I started with buttered, grilled ciabatta bread.  Layered it with roasted turkey that I had brined and herbed, homemade slaw, swiss cheese, and a pickle.  Thankfully, I was able to grab the last of my fresh herbs before the first Nebraska freeze!

And voila!  This recipe may be featured in my November workshop...hint hint, nudge nudge.
