The Firecracker Fourth Poke Cake

Ingredients:

2 boxes White cake mix

1/4 cup Butter, melted

1 cup Buttermilk, room temperature

2 large eggs, room temperature

2 tbsp. Vanilla

1 cup Water

3 tbsp. Berry blue jello mix

3 tbsp. Strawberry jello mix

3 tbsp. Blueberry jam

3 tbsp. Strawberry jam

8-10 Large strawberries, rinsed

1 cup White chocolate chips

Patriotic sprinkles

2 cups Heavy whipping cream

1 tbsp. Sugar

Set oven to 350°F. Using a standing mixer, combine the cake mix and buttermilk. Add the butter and eggs while mixing until ingredients are incorporated. Scrape down the sides and add vanilla. Incorporate once again. Pour the batter in even amounts into two 8” round cake pans. Place in oven for 20-25 min., or until golden brown. Place on a cooling rack once finished.

Bring a 1/2 cup water to boil in each of two saucepans. In one pan, dissolve the blueberry jam and jello. In the other, strawberry. Once the contents are dissolved completely, set aside to cool. Once cooled, using a chopstick, poke holes around each cake, leaving a 1/2”-1” border on the edge. Pour the respective jello mixtures over each cake. Cover with plastic wrap and let set in the fridge for at least 2 hours.

Melt the white chocolate in the microwave in 20-30 sec. intervals, so as to not scorch the chocolate. Dip the strawberries in and place on parchment paper. Use your favorite patriotic sprinkles to decorate. Set aside to cool.

In a stand mixer, whip the heavy cream and sugar until at desired consistency, making sure not to over-whip. Place one of the cooled cakes fruit side up on a cake stand and frost the top with the whipped cream. Place the other cake fruit-side down on the last. Frost the top and sides of the cake and decorate with the chocolate covered strawberries. Can serve immediately or rest in fridge. Enjoy!
