One Pot Cheesy Orzo

Ingredients:
2 tablespoon butter
1 tablespoon olive oil
1 large shallot - minced
garlic x 3 minced
1 cup orzo
2 cups broth
1 cup cream
1/2 cup parm
4 ounces soft fontina
salt and pepper to taste

Directions:
As the name suggests, this is all going in one pot!

To start, add orzo with butter, olive oil, garlic and shallot.

Cook until shallot is softened and orzo is golden.

Add bone broth then simmer until reduced.

Once reduced, add cream.

Simmer on low 10-15 minutes.

Add and stir in parmesan and soft fontina.

Add salt and pepper to taste.

Garnish:

Flat leaf Italian parsley and more Parmesan (freshly grated)

Serve! Accompanies so many dishes well.
