Duck Fat Home Fries with Egg and Crispy Breadcrumbs

Have any of you ever seen the John Wick movies!?

Now I’m not saying John Wick 2 inspired this new dish by any means... but my son reminded me of a scene in the movie while I was creating this dish in the kitchen. John walks into a restaurant and the character he confronts was eating roasted potatoes. He looks at John and says, “You know what the secret is? Duck fat. Makes all the difference.” And then he takes a bite.

Now, I won’t say what happens next, but I couldn’t agree more with that statement. Duck fat DOES make all the difference. It elevates these home fries and takes them to a whole different level. You can find duck fat in specialty food stores, on Amazon, and some grocery stores even carry it in the same aisle as olive oil. Speaking of olive oil, you can always substitute the duck fat with it, or even use bacon fat! But you will not regret cooking them this way. You may in fact thank me. As I said... Next. Level. 

Add the crispy bread crumbs, and you have now made your breakfast or brunch an actual experience. And isn’t that what we all want when eating amazing food?!? I thought so.

Duck Fat Home Fries with Egg and Crispy Breadcrumbs

4-6 servings

Ingredients:

Breadcrumb topping:

1/3 cup Panko breadcrumbs

1 tbsp. Parmesan

1/4 tsp. Garlic powder 

1 tbsp. Olive oil

Home Fries:

1/4 cup Duck fat

5-6 cups Baby red and gold potatoes, diced

1/2 tsp. Kosher salt

1/4 tsp. Black pepper

1/4 tsp. Paprika

1/2 Red onion, diced

Fried eggs, to serve with

Toast the breadcrumbs in the parmesan, garlic powder, and olive oil in a skillet over medium heat until golden brown and crispy. Set aside to cool.

Over medium heat, melt the duck fat in a frying pan. Add the potatoes, salt, pepper, and paprika and cover for 5 min. Toss and cover another 5 min. Add the red onion and toss to combine. Cover and cook another 5 min. While uncovered, toss occasionally for 15 min., or until the potatoes are softened and crispy on the bottom. Serve in bowls and top with a fried egg. Sprinkle the crispy bread crumbs over top and serve immediately. Yum!
