Italian Frittata

Ingredients:

Salami

Prosciutto

5 Ounces of Parmesan

4 Medium Russet Potatoes

5 Ounces of Soft Fontina

¾ Teaspoon Pepper

½ Teaspoon Salt

½ Cup Half and Half

2 Teaspoons: Dijon Mustard

8 Large Eggs

Green Onion

1 Tablespoon Butter

Instructions:

Preheat your oven to 350 degrees.

Shave 4 Potatoes and add them to a pot of Water on medium to low heat until fork tender.

In a bowl, whisk Eggs, Pepper, Salt, Half and Half, and Dijon Mustard.

Roughly chop Prosciutto and your choice of Salami. Add to the cast-iron skillet to cook.

Drain Water and slice Potatoes.

In your cast iron, layer Cheese, Egg Mixture, and Potato.

Place in the oven and bake for 35-40 minutes or until golden brown.

Chop Green Onion.

Remove from the oven, slice like a pizza, and garnish with Green Onions!
