Pineapple Salsa
Ingredients:
1 Diced Pineapple - and its Shell
¾ Cup Jalapeños (Seeds optional)
Handful of Cilantro (Optional)
⅓ Cup Red Onion, minced
½ a Red Bell Pepper, minced
½ an Orange Bell Pepper, minced
½ a Yellow Bell Pepper, minced
1 Lime, juiced
½ Teaspoon Salt
½ Teaspoon Ground White Pepper
A Couple Dashes of Cholula Hot Sauce
Instructions:
To prep the Pineapple, cut it in half vertically, trying to keep as many of the leaves intact as possible. Carve out the center pit, then cut or spoon out the insides, leaving a thick enough shell to be the bowl.
Dice the larger chunks of Pineapple, and place in a large mixing bowl
Combine with the rest of the ingredients, mixing all together, then let sit for 15 minutes.
Transfer to the pineapple bowls, and you're ready to serve beside the pool!
