Tomato Pesto Party Favors

Ingredients: (Recipe is doubled to be able to fill 4 of the mason jars pictured in the video!)

4 Tomatoes

1 Head of Garlic

Drizzle of Olive Oil (Graza is the best!)

1 Cup Parmesan

1 Cup Pine Nuts

1- 1 ½ Cup Olive Oil

2 ½ Cups Packed Fresh Basil Leaves

Salt and Pepper to taste

Instructions:

Begin by drizzling your Tomatoes and 1 head of garlic with Olive Oil. Roast them in the oven at 375 degrees for 20-25 minutes.

While those roast, toast your Pine Nuts over low to medium heat.

Remove and let your Tomatoes and Garlic cool for a couple of minutes. Drain any excess liquid. Remove your Basil Leaves from their stems.

To a food processor, add your roasted Tomatoes and Garlic Cloves, removing the Cloves from their shells. Following, add Pine Nuts, Parmesan, Fresh Basil Leaves, and Salt and Pepper to taste. Finish with Olive Oil. Blitz, and progressively add more Olive Oil until you reach your desired consistency.

Remove from the food processor and divide into 4 wide mason jars. Tie with whatever ribbon you desire, and enjoy! :).
