French Onion Soup

Ingredients:

3 Tablespoons Butter

3 Tablespoons Olive Oil

2 Yellow Onions, Thinly Sliced

2 White Onions, Thinly Sliced

Salt + Pepper

1 Tablespoon Sugar

3-5 Sprigs of Fresh Thyme

2-3 Short Rib Bones

1 Baguette, Sliced

¼ cup Better Than Bouillon Beef Base

Balsamic Vinegar

8 Cups Water

Generous Handful of Gruyere, Shredded


Instructions:

Begin by prepping your Onions and add them into a pan with Olive Oil and Butter on medium heat.

Add Salt, Pepper, and Sugar. Toss and add fresh sprigs of Thyme.

Toss again and reduce the heat to low, letting the Onions become fragrant, golden-brown, and translucent. Cook for an hour on low, stirring occasionally.

Halfway through cooking your Onions, add a nice big splash of Balsamic Vinegar.

While those Onions cook, season your Short Ribs with Salt and Pepper and sear on medium-high heat.
Sear your Short Ribs in a heavy-set pot on medium-high for about 3-4 minutes each side.

Add water and Better Than Bouillon to the pot. Cover and cook on medium-low for an hour.

While that simmers, finish cooking your Onions to a nice golden-brown.

After an hour, if you want to shred a little bit of the Short Rib in the broth, please do!

Add Onions to your pot and simmer for another 15-20 minutes. Taste for seasoning and add salt and pepper to your liking.

Butter your Baguette, pile on the Gruyere, and broil on low.

Serve your soup with Cheesy Gruyere Toast.
