Happy Saturday and happy game day! When it comes to quick and easy, let me just say I have perfected this type of meal-making! I love love the pulled pork or pulled chicken you can buy at your local big warehouse or grocery store, and I’m always trying to find unique and yummy ways to use it, like in my pulled chicken (or pork!) soup! But today, I thought I would combine my easy focaccia bread with some smokey and juicy pulled chicken. If you don’t want to make the focaccia, no worries! Just pick some up at the bakery!

Let me warn you though, my family gobbled these up in about 10 seconds, so make extra!! My quick pickling turned out so amazing, and with a gochujang sauce, it was a match made in heaven! Much to my surprise, it brought on some fall-like hankerings for something warm and cozy to have for dinner! One of the things I tend to always keep in my pantry is a container or jar of Rao’s red sauce. You can get them almost anywhere now— I, of course, go to Costco!

She’s always experimenting with my asian condiments and seasonings for her ramen, and now tried her hand at breakfast! She made this fried chili egg and I HAD to get my phone out for pictures! And simply cooking the egg in chili oil rather than cooking oil… incredible. She’s hired!

Make-Ahead Cheesy Italian Potato Casserole
Hello to all my Creme foodies! I’m headed to the lake house with some friends for the weekend and as I leave my family behind, I want to make sure they have some easy-peasy meals and food made ahead so they can just pop it in the oven! So, I decided to create an “on the fly” make ahead casserole, which is a spin on the “funeral potatoes” that I usually make as a quick meal. I, of course, usually add a great protein along with like chopped ham to make the perfectly delicious to-go meal! Hope you all enjoy the new take!
Pasta with Asiago Cream Sauce and Truffle Breadcrumbs
Wow, was this a good one... Today, I create my now and forever replacement for Pasta Alfredo... this cheesy, creamy sauce was so simple and yet SO rich in flavor. And to top it all off with toasted truffle breadcrumbs?? Absolutely to die for. But don't take my word for it... go grab a bottle of truffle oil and make it yourself!! Hope you all enjoy!!
Summer Grilled Korean Scallops
We decided to cook up some scallops on the grill. To be honest, I had never grilled a scallop on a grill before— so I was careful not to overcook. Nobody likes a tough scallop! And speaking of tough-be sure to take the small “sucker” off the side of the scallop and pat dry. That little sucker is tough to eat! I then made up a quick Korean marinade and had them sit themselves in the fridge in a ziplock for a good 45-50 minutes. It worked perfectly. Nice and tender and the char from the grill was fantastic! I may not make scallops any other way! If you don’t like the extra heat from the crushed red chilies, you can certainly omit. But remember, the Korean Chili powder is mild, but oh how it brings so much flavor!
Smothered Beef & Pork Enchiladas
Memorial Day weekend was our first big vacation since summer break started and we finally got caught up on some much needed family time! Taking in the beautiful sights of the lake on our walks, having drinks out in front of the water, boating, tanning, and of course cooking! The vacationing didn't stop as soon as dinner had to be made, so I chose to create a fun and delicious smothered enchiladas recipe! With the help of my kids too, it simply added to the time we got to share all together in one place, which I will not soon forget! Happy Holiday Saturday, everyone! I’m sure a lot of you have had kids move back home for the summer, just as I have. After a long year during the pandemic at SDSU in Brookings, it was time for two of my girls to move back home. Lots of visits at the lake house and extra FaceTime helped us get through the past school year and now, once again, we are all back in the same state!
