Chicken Parmesan

Ingredients:
2-3 large chicken breast
salt and pepper
garlic powder

3 eggs
2 garlic cloves minced

2 cups panko
2 cups fresh bread crumbs
1/4 cup parmesan cheese
1 tsp dried basil
2 tsp salt
1/2 tsp black pepper
fresh mozzarella
provolone

Directions:
Cut chicken horizontally, while pressing with your palm.
Lightly pound out the thicker side under plastic wrap.
(avoid over pounding as it creates a tough meat)

Season with salt, pepper and garlic powder.
Whisk egg mixture and place in another shallow pan.
Dip chicken in egg mixture first.
Then, dip chicken in seasoned bread crumbs.
Set aside.
Fry chicken in equal parts butter and olive oil.

Grab a large baking dish.
Spread a thin layer of Italian red sauce on bottom.

Layer your crispy chicken on top of red sauce.
Pour remaining red sauce over the top middle part of chicken.
Layer cheese on top of each piece of chicken.

Place baking dish in a 400 degree oven.
Bake until cheese is melted and gooey.
Take dish out of the oven.
Top with fresh Italian parsley.
Serve with your favorite pasta dish.
