Italian Red Sauce

Ingredients:
(2) 28 ounce cans of whole tomatoes (with juice)
4 tablespoons extra virgin olive oil
1/2 red onion diced
6 garlic cloves minced
1 tsp kosher salt
1/2 tsp dried basil
1/4 tsp fresh ground black pepper
1/4 tsp sugar
pinch red pepper flakes (optional)

Directions:
Heat olive oil in a pan on medium heat.
Sauce onions until just soft.
Add minced garlic.
Cook for a few more minutes.
Do NOT let garlic brown.
Place onion mixture in food processor with tomatoes.
Puree until smooth.
Add tomato mixture back in the pan.
Season with salt, basil, black pepper and sugar.
Optional - add red pepper flakes.
Simmer over low heat for 30 minutes.

Variation:
Add 3 TBL butter to sauce before serving.
This will add a richness!
