Flaky Almond Croissant

Ingredients:

Vanilla Syrup

1 Cup Water

1/4 Cup Sugar

1 Teaspoon Vanilla Extract

Almond Filling

3/4 Cup Sugar

3/4 Cup melted Butter

1/2 Cup Almond Meal

2 Eggs

1 1/2 Teaspoon Almond Extract


Slivered Almonds

Powdered Sugar

Store-bought Croissants


Instructions:

Preheat the oven to 350 degrees.

Start with your Vanilla Syrup, combining Water, Sugar, and Vanilla Extract on the stovetop. Bring to a simmer for 2 minutes and set aside to cool.

While that heats up, start on your Almond filling by melting the Butter.

In a bowl, add your melted Butter, Sugar, and Almond Meal.

In a separate bowl, add 2 Eggs and Almond Extract.

Take the Butter and Sugar Mixture off the heat and slowly incorporate it into the Egg Mixture, using a tempering technique, careful not to curdle the Eggs.

Brush the Vanilla Syrup on the inside and the outside of the Croissant. Then add 2 heaping Tablespoons of Almond Filling and spread. Close, brushing the sides and the top with more Syrup.

Scatter Sliced Almonds and press in.

Add to a sprayed cookie sheet. Bake for 15 minutes or until golden brown and flaky.

Remove and top with sifted Powdered Sugar.
