Pan-Seared Cod
Ingredients:
3-4 Six Ounce Wild Cod Fillets
Salt and Pepper
Flour
2 Tablespoons Olive Oil
5 Tablespoons Butter
1 Minced Shallot
1 Smashed Garlic Clove
2-3 Fresh Thyme Sprigs
1 Bay Leaf
5 Tablespoons Fresh Lemon Juice
1 Teaspoon Sugar
Instructions:
Preheat the oven to 400 degrees.
Generously season both sides of the Fillets with Salt and Pepper.
Dredge both sides of the Fish in flour. Then, shake off any excess. Set aside.
Heat a non-stick (oven-safe) skillet to medium-high heat and add the Olive Oil.
Sear each side for approximately 1 minute. Immediately place the pan in the 400-degree oven for 6-8 minutes.
While the Fillets are roasting, prepare the Butter Sauce.
Mince 1 Shallot and 1 Garlic Clove.
Melt Butter in a small saucepan over medium heat. Careful not to burn.
When the Butter starts to brown, add the Shallot, Thyme, and Bay Leaf. Stir well for a couple of minutes until you start to smell the herbs.
Add Lemon Juice and Sugar. Turn down the heat to low and season with Salt and Pepper. Serve the sauce over the Fish.
