Brussel Sprout Apple Salad

Ingredients:

3/4 Pound Brussels Sprouts (Thinly Sliced)

1/4 Cup Hazelnuts (Roasted and Chopped)

1/2 Gala Apple (Thinly Sliced and Quartered)

2 Ounces Grated Fresh Parmesan

1/3 Cup Craisins

Vinaigrette

1/3 Cup Olive Oil

1-2 Minced Garlic Cloves

2 Tablespoons Lemon Juice

1 Teaspoon Dijon Mustard

1 Tablespoon Maple Syrup

Salt and Pepper to Taste

Instructions:

Thinly slice the Brussels Sprouts and Apple using a Mandolin or Food Processor. Place in a large bowl and set aside.

Whisk all the ingredients for the Vinaigrette in a small bowl or mason jar until emulsified.

Roast Hazelnuts on low-medium heat until fragrant and a little golden. Watch carefully!

Combine the Brussels Sprouts and Apples along with the Roasted Hazelnuts and Craisins. Drizzle over the 1/2 of the Vinaigrette and toss with tongs to combine. Slowly, add more vinaigrette until the desired taste and consistency are achieved.

Cover and place in the fridge for about 20 minutes before serving.

Top with Grated Parmesan.
