Ground Beef Vegetable Soup
Ingredients:
1 Pound Ground Beef
1 Tablespoon Olive Oil
1/2 Yellow Onion (Chopped)
2-3 Garlic Cloves (Minced)
3 Carrots (Diced)
2 Celery Stalks (Minced)
1 Cup Fresh Green Beans (Chopped)
1 Cup Frozen Corn
1 1/2-2 Cups Baby Potatoes (Diced)
5 Cups Water
2 Tablespoons Better Than Bouillon Beef Flavor
1 Can Tomato Soup
1 28-Ounce Can Whole Peeled Tomatoes Roughly Chopped
2 Teaspoons Worcestershire
1 Teaspoon Dried Basil
1/2 Teaspoon Dried Oregano
A Pinch of Red Pepper Flakes
1 Bay Leaf
Salt and Pepper to taste
Fresh Italian Parsley to garnish
Instructions:
In a large, heavy-bottom pot, brown the Ground Beef in 1 Tablespoon Olive Oil.
Add the Yellow Onion, Garlic Cloves, Carrots, Celery Stalks, Fresh Green Beans, Frozen Corn, and Baby Potatoes, cooking until slightly tender.
Add the Garlic and cook until it becomes fragrant.
Add the Dried Basil, Dried Oregano, and Red Pepper Flakes next, then add your Water and Bouillon. Stir and simmer for about 5 minutes.
Add the Tomato Soup, Tomatoes, Worcestershire, and Bay Leaf. Cover and simmer for 45 minutes to an hour.
Taste for Salt and lots of fresh cracked Black Pepper. Serve in bowls or a large mug and garnish with Fresh Italian Leaf Parsley and enjoy :)!
