Classic Irish Reuben Sandwich

Ingredients:

Homemade Thousand Island Dressing

1/2 Cup Mayonnaise

2 Teaspoons Sugar

1 1/2 Tablespoon White Vinegar

1/2 Teaspoon Lawry’s Seasoning

2 Rounded Teaspoons Sweet Pickle Relish

2 Tablespoons Ketchup

1 Tablespoon Dijon Mustard


Flat Corned Beef

1/3 Cup Brown Sugar

1 Whole Guinness

2-3 Cups Water

Rye Bread

Baby Swiss Cheese

Sauerkraut

Butter

Instructions:

In a crockpot, add 1 whole bottle of Guinness and 2-3 cups of water to barely cover the brisket, your included seasoning packet, and Brown Sugar. Seal it for 10-12 hours on low.

Mix in a bowl Mayonnaise, Sugar, White Vinegar, Lawry’s Seasoning, Sweet Pickled Relish, Dijon Mustard, and Ketchup to make your Homemade Thousand Island dressing.

Spread the Thousand Island Dressing and add a slice of Swiss Cheese to each slice of Rye Bread.

Spread a good helping of Frank’s Sauerkraut on one side and the shredded Corned Beef on the other side of the sandwich.

In a skillet on low to medium heat, add your Butter and place the sandwiches in. Cover to melt the Cheese.

Flip until browned on each side and remove. Cut in half and serve!
